Bacon Jam

This picture does it more justice than the one I took. Anyway, made Bacon Jam today cos I was inspired by a friend’s instagram post. Okay more like it’s because the idea of a savory bread spread sounded really interesting.

  • 400g of back bacon
  • 3 cloves garlic, finely chopped
  • 1 onion, sliced
  • 2 teaspoons of chili powder
  • 1 teaspoon cinnamon
  • (optional) 1 teaspoon corriander powder (this will make your bacon jam taste somewhat like bakchang/Chinese rice dumplings)
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon black pepper
  • 50g gula melaka (brown coconut sugar)
  • 1/2 cup strongly brewed coffee
  • 1/2 cup water
Directions:
1) Cut all the bacon into 1 inch pieces and fry them on a pan. I fried till they’re kinda crispy (but not too dry) before removing them.
2) With the leftover oil on the pan, fry the onion and garlic.
3) Pour the cooked bacon back into the pan for a quick stir and add in all the other ingredients. Simmer for about 45mins-1hr till it’s thick and syrupy.
4) Put it into a blender (or as they call it, food processor) and blend it a little. The texture should still be somewhat chunky.
5) Refrigerate.
It tastes somewhat like minced bakchang cos of the corriander powder but I love the taste of corriander and pepper. Ahwell, //end experiment.
