AKA Nonya Spicy Pickled Vegetables.
Had a sudden inspiration to make making Nasi Lemak, had the Salmon baking in the oven and was thinking of a more interesting way to present the cucumbers. Then it occurred to me, achar!
My mom would usually make this way in advance, leaving it in the fridge to marinate for a couple of days, but it worked if you leave it in for an hour too! You’ll feel the crunch of the cucumbers more, instead of the soggy type where it has been stripped of most of its water due to the fermentation process, or osmosis of water.

150 g Cucumber – cut lengthwise 1½ inch
70g of pineapple – cut into 1 inch
(you can also add others like blanched beansprouts, turnip, just like in the real achar)
25g ground Roasted Peanuts
1 tablespoon Salt
1 tablespoon Sugar or to taste
1 tablespoons Shallot Oil/garlic oil
50 ml Rice vinegar
1 fresh Red Chili Padi
1/2 teaspoon turmeric powder
1/4 teaspoon cumin
1. Mix all the vegetables with 1 tbs salt. This is to reduce the excess liquid in them. Leave aside in a colander to dry excess liquid for about 30 minutes
2. Mix your spices
3. Put your drained vegetables into a glass container and pour the marinade over the vegetables in the container.
4. Keep chilled in the fridge until ready to serve.
Enjoy your achar with rice or in our case, Nasi Lemak! 🙂
